A vegan diet may do more than change what's on your plate. A new study suggests that just four weeks of eating vegan can alter chemical markers attached to DNA that may influence inflammation, metabolism and biological aging; but it doesn't prove you'll be healthier or live longer.

The study enrolled 48 healthy adults in a randomized clinical trial conducted by researchers at the University of California San Diego School of Medicine and the University of Freiburg Medical Center in Germany.

Study participants first ate the same standardized diet for one week. Then they were randomly assigned to follow either a vegan diet or a meat-rich diet for one month. The diets provided similar amounts of calories, which allowed researchers to examine the composition of the diets rather than differences caused by weight loss.

Before and after the dietary intervention, researchers analyzed blood samples from more than 800,000 DNA methylation sites across the genome. DNA methylation is a process that can affect whether genes are more or less active without changing the underlying DNA sequence. In other words, the researchers were looking not for changes to the genetic code itself, but for changes in the molecular signals that help regulate how genes function.

The researchers found that the vegan diet was associated with DNA methylation changes in pathways involved in immune function, metabolism, cell growth, DNA repair and cellular stress responses.

Some of the changes were consistent with a less inflammatory immune profile. For example, the analysis predicted lower proportions of neutrophils — immune cells involved in inflammation. It also predicted higher proportions of CD4 T cells, which help regulate immune responses. Those predictions agreed with blood-cell measurements taken during the original trial.

The researchers also examined biological aging using epigenetic clocks. These are mathematical tools that estimate aspects of biological age from DNA methylation patterns. Two clocks designed to predict health outcomes suggested that biological age slowed among participants following the vegan diet. A third clock, designed primarily to estimate chronological age, did not show the same pattern.

That distinction matters. Epigenetic clocks measure different aspects of aging and a change in one does not mean that someone has literally become biologically younger. The researchers say their findings point instead to changes in biological pathways associated with health and aging.

"Our genes are not our destiny,” Jerome Mertens, associate professor of neuroscience at UC San Diego School of Medicine and co-senior author of the study, said in a press release. "The remarkable finding isn't simply that one diet outperformed another. It's that the epigenome responded measurably in just four weeks, showing that our biology is far more dynamic — and responsive to everyday choices — than we often assume."

These findings should not be interpreted as proof that a vegan diet prevents cancer, reverses aging or guarantees better health. The study was small, involved healthy adults and lasted only one month. The observed methylation changes were also modest and occurred across hundreds and thousands of sites.

Further studies are needed to determine whether these molecular changes persist and, more importantly, whether they translate into lower disease risk or other measurable health benefits. For now, the study offers a glimpse of how quickly diet can affect biology beneath the surface. It also offers tempting evidence that food choices can influence the molecular systems involved in inflammation and aging sooner than scientists once appreciated.

The study is published in the journal, MedComm.
